Ya Better Wash Up Cause Itīs Time To Eat!!
Well...it is time to pull our chairs up to the kitchen table as Mom pops out a nice "hot" Super-Goober Cake from the oven. Yummy! This is an old receipe that just might win the hearts of all of us kids out there. It is a beautiful upside down cake. It might be one of the best cakes you have tasted in a long time. This dandy is topped with peanut butter and peach slices. Now pour yourself a big tall glass of wholesome cold milk and pick up that fork and dig in and enjoy. Remember... Clean your plate and help clear the table and by all means tell Mom how much you appreciated her making you this scrumpious "Super Goober" cake. Hopefully you will like it well enough to write it down and share it with the next generation to come. After all... it is not only fun to try new recipes but to have old recipes from past generations are even more precious.
Here it is....
1/4 cup butter
1/3 cup peanut butter
1/2 cup brown sugar
1/4 cup peach juice
1 3/4 cups well-drained canned sliced peaches
Cake Batter:
1 package Swans Down Instant Cake Mix (Use any brand of cake mix)
2 tablespoons sugar
1 1/4 cups milk
2 egg yolks, unbeaten
Combine butter, peanut butter, brown sugar and peach juice in 9 1/2 inch iron skillet or 9 x 9 x 2 inch square pan. Place over low heat and stir until butter is melted and mixture is blended. Remove from heat. Arrange well drained peaches on mixture. Set aside.
Turn cake mix into bowl. Add sugar and 1/2 cup of the milk. Blend, then beat 1 minute. Add 1/4 cup more milk. Blend, beat 1 minute. Then add egg yolks and remaining 1/2 cup milk and beat 1 minute longer. (Beat cake vigorously by hand or at medium speed of electric mixer.)
Pour batter carefully over peach mixture. Bake in moderate oven (375 degrees F.) 35 to 40 minutes for skillet, or about 50 minutes for pan. Cool cake in pan for 5 minutes. Then invert pan on serving plate and let stand 1 minute before removing pan. If desired, sprinkle with chopped nuts. Serve warm with whipped cream or ice cream.
